Earlier, I wrote about the upcoming debut of the Capella Kyoto, a new hotel in Japan’s former imperial capital that has the potential to set a new standard for luxury in the city. One of Capella Kyoto’s two restaurants will be a concept from the team at SingleThread Farms, a three-star Michelin restaurant founded by Kyle and Katina Connaughton, located in Healdsburg, California, in Sonoma County. ‘SingleThread’ is known for its Kaiseki-inspired ten-course tasting menu customized to our guests’ dietary preferences and restrictions.

The new restaurant titled SoNoMa (it is spelled that way) by SingleThread will be an homage to the cuisine of Northern California’s most prominent wine regions – Sonoma and Napa, with a Japanese lens.

SingleThread famously operates its own farm from which it sources the ingredients for its restaurant. That operation is run by Katina, who is working with local Kansai farmers to source the produce for SoNoMa.

The kitchen will be run by chef Keita Tominaga, who worked under Kyle at SingleThread as well as Hana Japanese restaurant in Rohnert Park, which was founded by his father, the late Ken Tominaga.

As far as the offering, diners can expect a multicourse tasting menu, though there will allegedly be a lounge dining option as well, where diners can enjoy lighter fare, cocktails, and high tea, and pastries.
