tl;dr – A new upscale brand that puts food first.
Thailand-based Minor Hotels recently announced a new brand in its portfolio – the Colbert Collection. The Colbert Collection is a “food-led” soft brand focusing on high-quality, story-rich dining, cultural immersion, and social connection. Inspired by Parisian cafés and London’s Colbert bistro, the brand aims to deliver authentic, curated culinary experiences that link travelers with local culture.

The first three properties in the brand will be located in Italy, Thailand, and London. Not bad selections if you’re trying to put food front and center.

Specifically, the hotels are:
Colbert Collection Koh Samui – Scheduled for a 2027 debut, this beachfront property currently operates as the 32-key Buri Rasa Village Samui resort (and it’s scheduled to undergo a renovation), but it’s unclear what the room count will be upon its rebranding/reopening. What is known is that there will be several dining outlets, and lush amenities including a spa, fitness center, and swimming pool.

The WestDill Mayfair Hotel London – Located in a former Bank, in addition to a marquee restaurant and bar, this hotel will also offer a convenient location – walking distance to Hyde Park, Green Park, Buckingham Palace, Bond Street, and Piccadilly Circus. The hotel will have 50 guest rooms and suites.

Porta Rossa Hotel Colbert Collection (Florence, Italy) – This hotel is already part of Minor Hotels as an existing NH Collection property. It will convert over to the Colbert Collection to become the first location in Italy. The exisiting hotel currently has 72-keys though it’s unclear if the room count will change with any possible renovations alongside the conversion.

Minor Hotels to me is super intriguing. I have suspicions that the chain might make a really solid acquisition target for a larger chain. More on that in a future article.
